Baked Red Snapper with Tarragon and Rosemary

Ingredients:

Whole Red Snapper (descaled)

Lemon

Fresh rosemary

Fresh tarragon

Garlic cloves chopped

Sea salt

Olive oil

Black pepper

Preheat oven 425 degrees. Score fish on both sides. Pour some olive oil in a small bowl. Chop some of the rosemary, tarragon and garlic and mix it in. Yes, your hands are going to be fishy! Rub the fish with sea salt and then the olive oil seasoning mix. Stuff fish with remaining herbs, lemon and garlic. Drizzle more lemon juice on top of the fish. Garnish with lemon slices and sprinkle black pepper on top. Bake for 55 mins or until tender.

I made yellow rice and sauteed spinach for the sides.

I got a store bought dessert because I did need to rest! Whew! It was pumpkin swirl cheesecake. With fish dinners, cheesecakes make a great light dessert to pair with it.

Marinated Tuna Omelette with Tomato Avocado Salad

Marinade Ingredients:

1 can chunk tuna

Lemon pepper

Shichimi Togarashi

Sesame oil

Chopped garlic

Sea salt

Pepper

Omelette Ingredients:

3 eggs

Shallots

Green pepper

Serrano pepper

Salmon Furikake

Vegetable oil

Salad Ingredients:

Tomato

Avocado

Sesame oil

Ponzu sauce

Sea salt

Black pepper

Lemon Dill Baked Whole Tilapia

Ingredients:

Whole Tilapia

Fresh dill

Chopped garlic

Lemon

Sea salt

Pepper

White wine

Olive oil

Preheat oven 400 degrees. Score fish on both sides.

Stuff fish with fresh dill, lemon, garlic and pour in a little wine. Rub sea salt all over fish. Season both sides with chopped dill, pepper and garlic. Place lemon slices on top. Drizzle with olive oil.

Bake for 30 minutes or until flesh is fluffy and easily pulled from bones. I made rice and sauteed spinach as my sides.

Strawberry Cheesecake Brownies

Ingredients:

1 box strawberry cake mix

8 oz cream cheese SUPER softened

1 lbs strawberries sliced

1 tablespoon vanilla

1/2 cup goats milk

2 eggs

1/3 cup vegetable oil

Frosting:

8oz cream cheese SUPER softened

1/3 cup confection sugar

1/3 cup strawberry jam

1 tablespoon vanilla

Preheat oven 350 degrees. Beat brownie ingredients until smooth. Grease bottom of a 9 x 13 pan. Pour in batter and make sure its evenly spread. Bake 45 minutes.

Beat the frosting ingredients in a bowl until it has a smooth spreadable consistency.

Spread frosting evenly over brownies.

These are literally some of the most moist brownies I have ever had.

Corned Beef and Cabbage Stew

Ingredients:

2.5 lbs of corned beef sliced

1 head of cabbage sliced

3 red potatoes cubed

2 yellow onions sliced

3 carrots sliced

3 cups beef broth

1/2 cup red wine

1 can tomato paste

1 tablespoon caraway seed

2 tablespoons turmeric

1 tablespoon rosemary

1 tablespoon thyme

1 tablespoon red pepper powder

1/3 cup of vinegar

1 bay leaf

2 star anise

4 cloves garlic chopped

vegetable oil

sea salt

lemon pepper seasoning

black pepper

water

Equipment: Dutch Oven

*I ended up having to buy my corned beef from the neighborhood deli so I asked them slice it thick. Then I sliced it again into strips when I got home*

Preheat oven to 400 degrees. On medium heat saute garlic, onions, carrots, sea salt, pepper, thyme, caraway seed and rosemary in vegetable oil. You will use the same dutch oven to do this.

Then combine corned beef and cabbage in the pot. Pour in beef broth, wine, vinegar and tomato paste. Cover with water and stir. Drop in a bay leaf and star anise. Add turmeric and red pepper powder.

Bake a maximum of 1.5 hours until potatoes tender. Remove from oven and stir occasionally and taste the broth to make sure seasoning is where you want it. Sprinkle in sea salt, pepper, and lemon pepper to taste. You can serve with rice or on its own.
