Smoked Salmon and Egg Salad Sandwich

Ingredients:

6 boiled eggs

smoked salmon chopped

6 tablespoons mayonnaise* more or less to get the smooth consistency

1 tablespoon dijon mustard

1/4 cup red onion chopped

1 celery stalk chopped

fresh dill chopped

sea salt

black pepper

fresh chives chopped

paprika for garnish

Combine all ingredients in a bowl and store in the refrigerator. Spread liberally on sandwich bread.

Five Spice Vegetables and Quinoa

Ingredients:

8 oz Baby Bella mushrooms sliced

1/4 cup green bell peppers diced

1 cup cherry tomatoes halved

1 yellow onion chopped

1/2 zucchini diced

4 cloves garlic chopped

1/4 cup soy sauce

2 tablespoons sesame oil

2 tablespoons Chinese Five Spice

Sea salt

Black pepper

Vegetable oil

*cilantro for garnish

For Perfect Quinoa:

Equipment: Rice cooker

1 cup quinoa

2 cups water

Vegetable oil

Grease the bottom of rice cooker pot. This will make sure the quinoa does not stick to the bottom. Set it and forget it. Once it’s ready put it off to the side because you will stir fry it later.

On medium heat, begin to saute the garlic, onions, bell peppers, zucchini and tomatoes in vegetable oil. Sprinkle with salt and pepper. Once the onions have started to brown add in mushrooms, soy sauce, five spice and sesame oil. Continue to toss for a couple of more minutes.

Lastly combine all the quinoa you made in the rice cooker with the vegetables. It will absorb the fluids so add a little more vegetable oil to stir fry it into your dish. Sprinkle a little more salt and pepper to taste.

This was prepacked for my lunch. I added cilantro as a garnish and a side of avocado.

Ahi Tuna Rice Bowl part 2

Ingredients:

Mango

Matchstick carrots

Avocado

Ahi Tuna steak cut in cubes

Rice

Seaweed salad

Sesame seeds as a garnish

Marinade Ingredients:

2 cloves garlic chopped

Sea salt

Black pepper

Ponzu sauce

Soy sauce

Sesame seed oil

Shichimi Togarashi

Sriracha sauce

I really like this meal after a long day of work. It doesn’t take that long to pull off. The only thing that I didn’t have was the seaweed salad. But I was able to pick some up at my neighborhood grocery store because they have a sushi bar section. So I literally walked in the door put the rice on in my rice cooker. Diced the tuna steaks and marinated it in the marinade ingredients for 30 minutes. I tossed tuna in some sesame seeds as a garnish. Then I assembled the ingredients in a bowl… remember rice at the bottom.

Roast Chicken Leftovers: The Second Chance Lunch

Ingredients:

Leftover roast chicken 🤣

Frozen mixed vegetables

1 tablespoon fresh chopped ginger

1 tablespoon green onion chopped

1/4 a celery stalk diced

1/2 Serrano pepper finely chopped

Basil

Oregano

Thyme

Sea salt

Black pepper

Paprika

Boil the meat down and remove the bones. Season to your preference and enjoy your free lunch!

Pita de Jour —- a Dining Review

Pita de Jour has been around I feel like forever here in Killeen. Its location is downtown right off Rancier near the scary H.E.B. But don’t let the location stop you. There is a slow rebuilding of the Downtown area. Now granted more expansion of the city is focusing near the airport. But do not I repeat DO NOT sleep on the great eats over there! I happened to find out about it because years ago I worked in downtown Killeen. History has a way of repeating itself so here I am again working back downtown in 2018 and I remember that super fat pita spot!!

Don’t let the dated building fool you it’s the example of never judging a book by its cover. It really has delicious food and large serving sizes. It’s not really greek nor mediterranean cuisine. It’s a more Americanized version of the concept. There are still American staples like fried chicken wings and french fries. You can completely customise your pita with a variety of veggies, meats, cheeses and sauces. Definitely call ahead because the food is made fresh to order so if you are on the clock be proactive about it. Due to the high temperatures lately it’s been a little hot in the restaurant so I would just grab and go until the weather breaks. Nevertheless check it out if you’re in the Killeen area for a super savory bite and pleasant conversation with the owner while you wait.

I had a lamb pita with pepper jack cheese, tomatoes, lettuce, olives, jalapeƱos, onions and spicy ranch sauce. Also you can choose between a regular ketchup or a spicy ketchup. I went with the spicy and large fries.
