Antoinette’s Inspired Baked Tilapia

This recipe was inspired by my best friend. I was so exhausted from work but had a bible study call to get on as soon as I walked through the door. She told me don’t worry about it and she cooked dinner for me and the boys. I was taking notes and she handed me an awesome plate of food. It was not only pretty but tasted amazing! After I got off the call I was like what the heck did she season the fish with?? She was like she just goes in the kitchen and just mixes stuff up. Just randomly cooks soooo good. So I couldn’t wait to try some of her techniques. So this recipe is inspired Miss Antoinette. Hope you try it because it’s quick to make and very tasty!

Ingredients:

12 fillets of Tilapia

1 tomato sliced

1 green pepper sliced

1 onion sliced

3 garlic cloves chopped

3 tablespoons of lemon juice

2 tablespoons olive oil

2 tablespoons Marsala cooking wine

1/2 stick of butter

Sea salt

Black pepper

Thyme

Paprika

Rick’s Hot And Spicy All Purpose seasoning (5in1) or Seasoned Salt

Preheat oven 350 degrees.

Melt the butter and then combine wine, olive oil, lemon juice, garlic and All Purpose Seasoning. Whisk the mix thoroughly. Set aside. Arrange the fish and place the sliced veggies on top. Then pore your butter mix all over the tilapia. Sprinkle salt, pepper, paprika and thyme on top. Bake for 23 mins.

Rick’s Hot & Spicy All Purpose Seasoning

So while at the dealership this random guy came in to speak to one of my coworkers. Apparently he makes his own blend of all purpose seasoning and barbecue sauce. He was so passionate about it so I was like well… I’ll bite. It can be used on fish, beef and poultry. By the smell of the blend I knew this was going to super good. So I didn’t add anything besides sea salt to the meat because there is no salt in the blends. It’s slightly spicy but not overpowering. I think it would be a great base for soups, gumbos and stews as well. As I use it more I’ll let you know. It could easily replace your Lawry’s seasoned salt TBT. Just add sea salt and marinate your meat overnight.

I tried the Cajun Blend first with sea salt on steak and threw it on the skillet.

I also tried the BBQ sauce. I used the 5in1 All Purpose Seasoning then added the BBQ sauce all over the chicken. It did not disappoint!!! Now he is local for 2 weeks out the month. He works at the border in the meantime. I left his contact information at the bottom if your interested and I give it a thumbs up! So definitely reach out to him to get some of your own.

Pan Seared Tilapia with Couscous

img_20180709_210757.jpg

So my friend told me I take forever to make anything. Whether it be sandwich or a meal. I can’t help it! I enjoy the whole prepping of the food thing. The chopping and dicing and mixing. It is so cool to me and I view it more like recreation or therapy. Yeah food is my therapy. I imagine the flavors first in my head how they blend together. I think of previous issues I have had with dishes and what I can do to improve. Problem solving so to speak. Well her number one thing is that in my household nothing is done with haste. We take our time getting dressed. Cleaning up. Going to run errands. Everything is always a process. So this time I wanted to prove her wrong. I wanted to make a quick and easy to put together meal. I decided on fish, a salad and couscous. Fish is a super quick unthaw. I’m going to pan sear it. Chop up a salad. Lastly couscous is simple boil and it takes 5 mins to soak up the flavors. So I went into the kitchen like a whirlwind to prove the bestie wrong! LOL.

Ingredients:

The Tilapia

Breading- equal parts flour, cornmeal, panko breadcrumbs, 1 egg beaten

Seasoning- 1 tablespoon of lemon juice, garlic powder, sea salt, black pepper, oregano

Vegetable oil

1 tablespoon of butter

The Couscous

1 cup couscous

3/4 cup water

1/4 cup chicken broth

2 tablespoons coconut water

1/4 cup diced green pepper

1/4 cup diced onion

1/4 cup frozen green peas

A few black olives chopped

1 clove garlic finely chopped

1/2 teaspoon cumin

1 tablespoon turmeric

sea salt and black pepper to taste

Put your tilapia in a large bowl and coat with the beaten egg and lemon juice. Then season to taste with sea salt, black pepper and garlic powder. In a small bowl mix flour, cornmeal and panko breadcrumbs. Batter the fish and pan sear in a skillet with butter and vegetable oil until each side is a golden brown. Remove and place on a plate with a paper towel to absorb the oil. Sprinkle over top with oregano. BOOM!

Now for the couscous. In a small pot, saute onions, black olives, garlic, green peas in a little vegetable oil. Sprinkle a little salt and black pepper over the veggies and stir. Add water, chicken broth, coconut water, cumin, tumeric and bring it to a boil. Add the couscous and stir quickly. Remove from heat and cover for 5 mins. Let the couscous soak up the mixture. Then after the 5 minutes stir again to make sure the veggies are evenly distributed. Taste it and sprinkle salt and pepper to your preference. POW!

Serve with simple salad of your choice. DONE!
