Spicy Salmon Poke

Ingredients:

1/2 lb skinned salmon fillet diced in cubes

1/4 cup soy sauce

2 tablespoons white wine

2 tablespoons chopped garlic

1/2 serrano pepper finely chopped

1 tablespoon minced ginger

1 tablespoon chili paste

2 tablespoons green onion chopped

1/4 cup red onion chopped

1/4 cup cilantro chopped

1 tablespoon sesame seeds

2 tablespoons Shichimi Togarashi

Sea salt to taste

Garnish: Nori pieces

In a small bowl, combine the marinade ingredients and toss well. Place in the refrigerator for at least 30 minutes.

You can eat poke as is or I like mine on a salad.

Garnish with nori! Yum😋.

Slow Cooker Beef Noodle Soup

Ingredients:

2 lbs of beef chuck roast

3 slices of ginger

2 green onions

1 large yellow onion

2 carrots

1/3 cup red cooking wine

8 cloves

8 cloves garlic chopped

3 star anise

3 bay leaves

1 cinnamon stick

1 teaspoon fennel

3 dried chili peppers

1 Greenhouse tomato quartered

1/3 cup of soy sauce

1 tablespoon sugar

2 tablespoons of beef base

1 teaspoon cumin

1 tablespoon black pepper

2 tablespoons of sea salt

Olive oil

Bok choy

2 packs of udon noodles

Garnish:

Jalapenos and cilantro

Equipment: 7 quart crockpot

**Fyi Walmart has them on sale at the time of this post for $20.

Boil 5 mins to get the muck off. Set it aside.

Slice thin half of the yellow onion. Then saute onion, garlic, ginger, bay leaf, anise, cloves, chili peppers, cumin, fennel, cinnamon, sugar and black pepper in olive oil.

Pour in wine, soy sauce and beef base. Let simmer.

Quarter half of the yellow onion and tomato. The slicing of the vegetables are meant for flavor purposes.

Slice the beef in portions sizes like pictured.

Drop in the spices you already sauteed. Then cover with water.

Cook on high for 8 hours. Add the sea salt and stir.

Boil udon noodles for 8 minutes. Strain them out and rinse with cold water breaking up the noodles. Set aside.

Blanch bok choy for 2 minutes. I cut off the ends and sliced them.

This was my final set up. Then combine your bowl.

Tuna Poke Bowl

Ingredients:

2 lbs of frozen Ahi Tuna

1/2 of a shallot chopped

olive oil

1/2 a large red onion chopped

1/2 a bundle of green onions chopped

3 cloves of garlic chopped

*1 serrano pepper finely chopped (optional for more heat)

2 tablespoons sesame seeds

Sauce:

1 tablespoon of Mirin

1 tablespoon of honey

3 tablespoon sesame oil

1/2 cup of soy sauce

1 tablespoon lemon juice

1 teaspoon Sriracha

sea salt

Veggies:

1 thinly sliced cucumber

rice vinegar

1 tablespoon of Mirin

edamame

1 mango sliced

matchstick carrots

avocado sliced

*Serve with rice

In olive oil, saute your chopped shallot with a little sea salt and black pepper until browned. Drain and set aside.

After your tuna has thawed out slice into 1 inch or smaller cubes. Place in a large bowl.

Whisk together soy sauce, sesame oil, Mirin, honey, a little Sriracha, lemon juice and a little sea salt in a small bowl. Then pour on top of tuna and thoroughly toss. Add scallions, red onions, green onions, serrano peppers, sesame seeds, garlic and toss. Place in refrigerator for at least 2 hours to marinade.

*I did a quick marinade for my cucumbers in a rice vinegar and a tablespoon of Mirin. Place in the refrigerator.

To make my tuna poke bowl, add rice at the bottom of the bowl. Tuna on top and garnish around it with vegetables.

Easy Beef Stir Fry

Ingredients:

2 lbs of beef

mixed vegetables (whatever kind you want)

2 tablespoons of butter to saute

*sesame seeds as a garnish

Sauce:

1/2 cup of soy sauce

2 tablespoons of flour for thickening

1/2 cup of water

2 tablespoons of mirin

2 tablespoon of grated ginger

1 tablespoon of brown sugar

4 cloves of finely chopped garlic

salt and pepper to taste

2 tablespoons of butter

Combine all your sauce ingredients into a sauce pan.

**Sorry but this is my oldie but goodie one. Thus the scratches….

On medium heat stir the mixture and let it cook for 5 minutes. Don’t allow the flour to clump, a whisk might be easier than a spoon. Make sure the butter is mixing well. If you don’t it will make like a ring around the edges. It’s only 5 mins so pay attention to it. Then turn it down to low heat.

Thinly slice your beef and set aside.

In a wok on medium heat with butter, salt, pepper, and a little water start your veggies.

Add the beef and toss, brown it but not all the way cooked through.

Add the sauce and toss so that everything is covered in the sauce. Add more salt and pepper to taste. Let it simmer until meat is cooked through. about 15-20 mins or so. Check on it periodically and toss some more.

Serve with rice and garnish with sesame seeds!
