Crock-Pot Roast Beef

Ingredients:

1 beef chuck roast

1 onion sliced

3 carrots sliced

1 green pepper chopped

3 star anise** secret ingredient👈🏾

1 large potato diced

1 bunch of cilantro chopped

2 tablespoon fresh ginger chopped

sea salt

onion powder

black pepper

garlic powder

Paprika

Rosemary

Rick’s Hot & Spicy All-Purpose Seasoning (Spicy Blend)

3 tablespoons flour to thicken

Equipment: Crock-Pot

Combine all meat and veggies in a crock pot on high. Cover with water. Season liberally and allow to cook for 8 hours.

After the 8 hours break the meat apart. Shouldn’t be hard at all. Taste and add more seasoning to your preference and flour to thicken the broth. Cook for 30 more minutes then serve with rice.

A Perfect Breakfast with Sizzle Steak

Ingredients:

Sizzle Steak

Worcestershire Sauce

Rick’s Hot & Spicy All-Purpose Seasoning (Spicy Blend)

Onion powder

1 potato cubed

1/4th an onion chopped

Seasoning salt

2 eggs

1/2 an avocado sliced

6 cherry tomatoes halved

Red wine vinegar

1/2 a Serrano pepper finely chopped

Sea salt

Black pepper

Paprika

Vegetable oil

Preheat oven 400 degrees. Season potatoes with seasoning salt and black pepper. Toss in a little vegetable oil. Bake with onions for about 35 minutes. Make sure they are soft.

Toss halved cherry tomatoes with a little red wine vinegar, avocado, sea salt, black pepper and Serrano peppers.

On medium heat, fry eggs sunny side up with sea salt, black pepper and paprika in vegetable oil.

On medium heat, place steak down in vegetable oil. Season top with a little worcestershire sauce, light sea salt, pepper, all-purpose seasoning, and onion powder. Let it brown. Then flip and season the other side with all but the worcestershire sauce. Let that side brown then serve. It’s a very delicious and refreshing meal. Also budget friendly!

Pan-seared Ribeye??! Today was my lucky day!!

Ingredients:

1 pack of Ribeye Steaks

Rosemary

Thyme

Basil

Sea salt

Cayenne pepper

Black pepper

1/3 cup of green onion chopped

1 lemon

Butter

Olive oil

Normally this cut of meat is out of my price range but the other day at the dealership the meat lady came by lol. So I got them for half price. I will not elaborate further. I was super pumped needless to say and so were the kids. There was 2 ribeyes per pack but due to their size and thickness, I realized I could cut them in half. Only one pack was need for me and the kids. So I still have a pack left!

Season the meat to your preferences with the ingredients above and allow it to marinade for 30 mins. Then pan-sear them on medium high on each side in a little butter and olive oil. Squeeze the lemon on each side of the steak. Once you have that nice blackened sear on each side. Place them in the oven on 350 degrees for 10 mins to cook them through.

Fyi: I don’t eat my steaks rare which is why I place them in the oven to further cook. Remember a great sear locks in the juices!

Roast Chicken

Now before I begin, keep in mind I have 3 growing boys so one roasted chicken will not cut it period. My boys have bottomless pits for stomachs so luckily H.E.B grocery store has those large chickens about 5-6 dollars a pop. A super good deal. This means leftovers and lunch with for me to pack for work.

Ingredients:

2 whole chickens

rosemary

oregano

juice from 1 large orange

sea salt

steak seasoning

garlic powder

4 cloves of garlic

2 large onions cut in large slices

4 carrots sliced in 1 inch

5 red potatoes sliced in 1 inch cubes

*Use a roasting pan for this recipe.

Preheat oven 450 degrees. Rinse off the chickens with water. Remove any giblets or organ meat stuff inside. I put mine in a Ziplock bag and in the freezer. I’m sure I’ll find some use for it.. a broth or something. Place chicken the roasting pan along with your sliced carrots and potatoes. Now slice your orange in half and squeeze over top chicken. Stuff the remaining half an orange inside each cavity. Stuff one garlic clove and a half an onion in each. The remaining onions sprinkle over the vegetables. The two remaining cloves slice and sprinkle over the chicken. Then season liberally with rosemary, oregano, steak seasoning, sea salt, and garlic powder. Roast covered for 2-2 1/2 hours depending on weight.

I was soooo hungry so I had a lot of meat its literally covering all my rice. 😭

Granola Bars from the crib?

Well its easy to make y’all. Dont get all caught up on dramatics with this one. All you need to have is all the stuff you want to eat in a granola bar plus oats. My foundation was a peanut butter/honey to hold it together. I use like a 1/4 cup of butter or a stick of butter. I just medium 3 cup of peanut butter, butter, a half a cup of honey. In a saucepan. Then I added all the raw mix to the bowl.. so there was cranberries, raisins, chocolate kisses, 3 cups of Oats, walnuts, hemp protein powder, ground flax, and almonds. Mix them together. It sticks and place in a pan and spread out flat Mash together with your hands. Then bake for 25 minutes at 350 degrees. Then I put mine in a freezer before putting it in a frigerator just to harden it faster. Now I’ve cut it into bars and wrapped so that I can distribute.
