Scratch Chocolate Chip Pancakes

My youngest son Rocco’s favorite food to eat is pancakes. Day or night he always asks for them… Like EVERYDAY. Normally I fix him some Aunt Jemima pancakes and keep it moving. But this morning I was out of the mix and happened to have some baking powder. That’s while lying in bed I mentally did a quick inventory of my groceries. Then realized not only did I have all the raw ingredients but the time to do it. So I let him know today was his lucky day. To make it more special I decided to make him chocolate chip pancakes because well… he loves chocolate.


1 1/2 cup flour

1 teaspoon salt

1 tablespoon sugar

3 1/2 teaspoons baking powder

1 egg

1 1/4 cup *vanilla* almond milk

1/2 cup chocolate kisses

3 tablespoons melted butter

Whisk together dry ingredients first.

Then add the rest. Whisk together until well blended.

Set eye on medium heat. In a little vegetable oil fry and flip like you would a normal pancake each side to a golden brown with crispy edges.

My Omelette is Cool

I absolutely love EGGS!!! Now I typically eat them sunny side up with rice and veggies. For some reason omelettes haven’t on my radar. It’s like I forgot about them or something until recently. I was at a BBQ the other day and was trading food stories with a friend. Boy he was bragging bragging about his omelettes. Sorry I took this as a challenge.

The ALPHA cook in me came out. I felt compelled to prove I make omelettes better. So made it the following morning, sent the pic and he was crickets. He struggled with that good job text I swear but I finally got it.🤣 I know….I’m very petty when it comes to competition.


4 eggs



Green bell pepper



Cheddar cheese


1/2 Serrano pepper

1 clove of garlic finely chopped

1 tablespoon of ranch dressing

1 tablespoon almond milk

Sea salt

Black pepper


Vegetable oil

Beat the eggs with ranch dressing, almond milk, salt, paprika and pepper. Dice the vegetables small in a separate bowl except the tomatoes and toss until they are well mixed. On medium heat pour in the egg batter and let it cook in vegetable oil for about two minutes. Then add your veggies evenly as to give the appearance of pizza toppings. Allow to cook and the eggs will thicken. Lastly add the tomatoes and cheese. Sprinkle a little salt and pepper on top. Once the cheese has melted and you have a slight brown border around the edges that’s how you know it’s ready!

Salmon Patties

Salmon patties are one of my favorite things to have for breakfast. I’ve been making them since I was a teen so I have mastered the patty. For sure! That’s how you know you are southern for real.

Ask yourself… Can I make a salmon patty?

If not then we gotta throw your entire Southern claim all away. Revoke your status. Deem you a city slicker until you get this whole patty thing down. I will help you out today because I know it can be heart breaking to know that yes… it’s really that serious.


1 can of salmon

1 egg

cap full of lemon juice

Lawry’s seasoned salt

1 tablespoon of Prepared Horseradish

1 tablespoon Worcestershire sauce

1/3 cup of chopped onions

garlic powder

**tarragon** My secret ingredient!!!

panko bread crumbs

cornmeal to batter

Drain the liquid from the salmon as best you can. Then put the salmon in a bowl to mix in your ingredients. Mix togther salmon, egg, lemon juice, horseradish, Worcestershire sauce and onions. Then season the mix liberally with tarragon, garlic, and seasoned salt. Continue to mix it thoroughly. Then sprinkle in panko crumbs enough to bind the mixture. If it’s too dry add some more worcestershire sauce.


Spoon out and shaped them into balls. Then to make it easier I put some cornmeal on a plate and gently batter the patties.


On medium heat fry the patties on one side to a golden brown. Gently flip, press it down to flatten slightly and let fry until golden brown. Flip again. And you’re done!




My Typical Brunch

I thought I would give you a quick peek at my typical weekend brunch. I don’t wake up early on my days off so this meal I usually eat at like 1pm. Sorry, I’m just not a morning person.

I keep it simple: eggs, a starch, and lots of vegetables. I’m not a fan of super heavy meals especially when I plan to go hiking right after. So this is my go to meal for myself and it’s very rare for me to eat something different. If there is a love interest, I’ll preplan the meal and purchase a steak so can give him a wow meal. Men love their steak and eggs it’s just facts.

Again this not on the regular. UGH. Anyway moving on….

Occasionally, I’ll have bacon but it is BEEF bacon. Since it’s very expensive at over $7 a package, I reserve that for my kids mostly as a luxury meat. I just eat my eggs and stay humble… let them enjoy it.


My latest find was Turkey Canadian bacon! My eldest son Troy has been dusting it off. It is really good too!


To some this looks odd because was never raised to eat this way but as I have gotten older I realized the American diet is just too heavy. Focusing on the fresh ingredients just treats your body right and in turn you will see increased energy and will maintain a healthy weight. Try it out and you will thank me later.
