Quick Roasted Tomatoes

Ingredients:

A couple of tomatoes sliced

olive oil

2 cloves garlic sliced thin

rosemary

thyme

sea salt

black pepper

Equipment: Aluminum foil

Preheat oven 450 degrees. Mix ingredients to taste in a bowl.

Cover a baking pan with aluminum foil. Spread out the ingredients and bake for 25 minutes.

I served as a side with my potato and egg hash for breakfast.

Sauteed Dandelion Greens (Bitter Herbs) for Passover

Ingredients:

2 Dandelion bundles chopped

1 yellow onion chopped

1 can chicken broth

2 red chili’s

3 tablespoons chopped garlic

1/4 cup red wine vinegar

2 tablespoons of cajun seasoning

sea salt

black pepper

1 stick of butter

vegetable oil

Boil dandelions for 20 minutes in a pot of water. Remove and drain the greens. Cut off the bottoms. This is to cut some of the bitter off the herb.

On medium heat, saute the onion, garlic and chili’s in vegetable oil until lightly browned. Sprinkle a little salt and pepper.

Then pour in chicken broth, vinegar and butter. Add greens and saute about 10 minutes or less. Season with cajun seasoning salt and pepper to taste.

Pickled Red Onions

1 large red onion sliced thin

3/4 cup of water

1/2 cup white vinegar

1/2 cup red wine vinegar

2 tablespoons honey

2 teaspoons sea salt

1 serrano pepper finely chopped *for spice*

In a small bowl combine the above ingredients. Place in the refrigerator for a minimum of 2 hours. These onions add a tangy accent to entrees or on sandwiches. Feel free to get creative.

Cheesy Potatoes

Ingredients:

7 potatoes medium-sized potatoes cubed with skin on

1/2 cup almond milk

3/4 stick of butter melted

Parmesan cheese

Mozzarella cheese

Colby jack cheese

Cheddar cheese

Sea salt

Black pepper

1/2 cup alfredo sauce

Italian seasoning mix

Fresh basil chopped

Fresh oregano chopped

1/4 cup green onion chopped

3 cloves garlic chopped

Olive oil

Bake potatoes lightly coated in olive oil on 350 degrees for 45 mins or until tender. Then remove from oven and mix in almond milk, butter, and alfredo sauce. Cover and mix potatoes with equal amounts of each kind of cheese. Then mix in garlic, some fresh basil, fresh oregano and green onion. Season with an Italian seasoning blend, pepper and salt. Stick it back in the oven for about 15 mins. The cheese should be gooey and potatoes soft. The fresh herbs will give it a major kick versus just using the Italian seasoning blend alone.

Pasta Salad

Ingredients:

2 vine tomatoes diced

1 cucumber peeled and diced

1 cup olives diced

1 cup of cheddar cheese diced

1 cup bell pepper chopped

1 cup red onion chopped

1 package of Tri-color Rotini Pasta

Italian dressing

2 tablespoons chopped garlic

Sea salt

Black pepper

Garlic powder

McCormick Salad supreme seasoning

Italian seasoning blendAfter you have boiled your noodles rise them in cool water. This cools them down for a quick serve. Toss with vegetables, cheese, and plenty of Italian dressing. Season liberally with Italian seasoning, salad supreme seasoning, black pepper, sea salt, and garlic powder. Super easy.
