Reese’s Peanut Butter Brownies

Ingredients:

1/2 cup melted butter

1/2 cup sugar

1/2 cup brown sugar

1/2 flour

1/3 cup unsweetened cocoa powder

2 tablespoons vanilla

2 eggs

1/2 cup vanilla almond milk

1 cup mini Reese’s peanut butter cups

1/2 cup chunky peanut butter

4oz semi-sweetened bakers chocolate chopped

1 teaspoon salt

1 teaspoon baking powder

Vegetable oil *only to grease baking pan*

Preheat oven 350 degrees. Combine dry ingredients in a large bowl separately. Stir sugar, flour, baking powder, salt, and cocoa powder until well mixed. Melt butter first and mix with peanut butter in a small bowl. Then add to dry mixture. Combine the remaining ingredients and throughly mix. Your brownie batter should look like this.

Grease a 9 x 13 baking pan to ensure it wont stick. Pour in the mixture and make sure its evenly spread in the pan.

Bake about 35 minutes. Check the Middle with a toothpick to verify it’s not raw. But it still should be chocolatey. You will be able to tell.

Scratch Chocolate Chip Pancakes

My youngest son Rocco’s favorite food to eat is pancakes. Day or night he always asks for them… Like EVERYDAY. Normally I fix him some Aunt Jemima pancakes and keep it moving. But this morning I was out of the mix and happened to have some baking powder. That’s while lying in bed I mentally did a quick inventory of my groceries. Then realized not only did I have all the raw ingredients but the time to do it. So I let him know today was his lucky day. To make it more special I decided to make him chocolate chip pancakes because well… he loves chocolate.

Ingredients:

1 1/2 cup flour

1 teaspoon salt

1 tablespoon sugar

3 1/2 teaspoons baking powder

1 egg

1 1/4 cup *vanilla* almond milk

1/2 cup chocolate kisses

3 tablespoons melted butter

Whisk together dry ingredients first.

Then add the rest. Whisk together until well blended.

Set eye on medium heat. In a little vegetable oil fry and flip like you would a normal pancake each side to a golden brown with crispy edges.

My Caesar Dressing

Ingredients:

1/3 cup olive oil

2 tablespoons Stone Ground Dijon Mustard

2 tablespoons Worcestershire sauce

2 tablespoons lemon juice

1 teaspoon of sea salt

1 teaspoon black pepper

2 cloves garlic finely chopped

1 egg yok

3 tablespoons of Miracle whip

2 tablespoons finely chopped Parmesan cheese

Whisk together until well blended. Taste and adjust salt or pepper based on your preference.

Rick’s Hot & Spicy All Purpose Seasoning

So while at the dealership this random guy came in to speak to one of my coworkers. Apparently he makes his own blend of all purpose seasoning and barbecue sauce. He was so passionate about it so I was like well… I’ll bite. It can be used on fish, beef and poultry. By the smell of the blend I knew this was going to super good. So I didn’t add anything besides sea salt to the meat because there is no salt in the blends. It’s slightly spicy but not overpowering. I think it would be a great base for soups, gumbos and stews as well. As I use it more I’ll let you know. It could easily replace your Lawry’s seasoned salt TBT. Just add sea salt and marinate your meat overnight.

I tried the Cajun Blend first with sea salt on steak and threw it on the skillet.

I also tried the BBQ sauce. I used the 5in1 All Purpose Seasoning then added the BBQ sauce all over the chicken. It did not disappoint!!! Now he is local for 2 weeks out the month. He works at the border in the meantime. I left his contact information at the bottom if your interested and I give it a thumbs up! So definitely reach out to him to get some of your own.

Granola Bars from the crib?

Well its easy to make y’all. Dont get all caught up on dramatics with this one. All you need to have is all the stuff you want to eat in a granola bar plus oats. My foundation was a peanut butter/honey to hold it together. I use like a 1/4 cup of butter or a stick of butter. I just medium 3 cup of peanut butter, butter, a half a cup of honey. In a saucepan. Then I added all the raw mix to the bowl.. so there was cranberries, raisins, chocolate kisses, 3 cups of Oats, walnuts, hemp protein powder, ground flax, and almonds. Mix them together. It sticks and place in a pan and spread out flat Mash together with your hands. Then bake for 25 minutes at 350 degrees. Then I put mine in a freezer before putting it in a frigerator just to harden it faster. Now I’ve cut it into bars and wrapped so that I can distribute.
